I hope you are having a great start to your week and that you all had a WONDERFUL Easter ! This past weekend, I crafted some Easter Cupcakes for our COVID19 Easter celebration, and needless to say, it was A LOT different than any other Easter I’ve ever had. We had a great time indoors and in the backyard with family playing games, cooking, and throwing the football around. Though we were stuck inside, I wanted to make the best out of it and I decided that since everyone is doing it, I would bake! I love baking! I actually used to work at a place where we sold cake decorating supplies, so I’ve got a little knack for cake decorating. Cupcakes are a guilty pleasure of mine, and, anyways, who doesn’t love a good cupcake?
Below you will find my cake and icing recipe that I use to bake and decorate my cupcakes. I am more than happy to share all of the tips and tricks I learned in my years working at the Cake Shop, and the trial and error pieces I have learned as well.
I created these recipe cards with my cake and icing recipes that you can download and print to reference when you make it.

This is BY FAR the best cake recipe that I have ever come across. Your cake will be moist for DAYS in the fridge, and yummy!
The icing recipe I used for these cupcakes is just a standard decorator’s icing recipe. I love this recipe because it is fairly simple to make, has minimal ingredients and tastes great! This icing recipe is perfect for outdoor events, where your icing needs to hold up in heat. (Granted icing really isn’t made to “hold up in heat”, but this one will last longer than the rest!), If you use water, rather than milk in your recipe, your cake or cupcakes do not need to be refrigerated, making this icing a great option for outdoor birthday parties, or any event where you have to travel to a location where there may not be a fridge.

I bought all of the easter decorations at Target in the seasonal section, but Walmart ALWAYS has a great selection of cake decorating supplies, toppers, and chocolates. If you are looking for seasonal stuff, Target is definitely a good choice, but make sure the get there when they put their seasonal stuff out, as it’s first come first serve. Walmart has a selection of cake decorating stuff all year long, so they are always my go to for non-seasonal stuff! I believe Michaels also has seasonal wilton products as well as a year long selection of cake decorating items, but Walmart’s prices are hard to beat!
